Cinnamon Chia Seeds Muffins

Chia seeds boost many amazing health benefits. Ever since I read that two tablespoons of chia seeds a day can help weight loss, I've been trying to incorporate chia seeds into my breakfast menu.

While adding chia seeds to smoothies, yogurts and puddings taste delicious, I lean towards chia seeds recipes that are quick, make-ahead foods which I can prepare over the weekend, and "grab-it-and-run" for busy mornings.

This muffin recipe is really good and so easy that you'll find yourself making homemade chia seeds muffins again and again. The sour cream makes every bite of these chia seeds muffins wonderfully moist and fluffy while the cinnamon adds just a lovely delicate flavor.

Enjoy these delightful muffins plain, hot from the oven or iced with dark chocolate frosting for dessert. They also freeze well for weeks if double-wrapped with plastic film and stored in sealed container.

Chia seeds can be found at most health food stores locally or online.

Cinnamon Chia Seeds Muffin Recipe

Makes 12 muffins


½ cup butter

¾ plus ¼ cup sugar

2 eggs, at room temperature

¾ cup sour cream

1½ teaspoon vanilla

2 cups unbleached all-purpose flour, sifted

1-2 tablespoons chia seeds

½ teaspoon salt

¼ teaspoon baking soda

¼ teaspoon cinnamon


How to make cinnamon chia seeds muffins

1. Preheat your oven to 375˚F. Lightly grease a 12-cup muffin tin.


2. Mix ¼ cup sugar with cinnamon in a small bowl. Set aside for later use in the recipe.


3. Place butter and ¾ cup sugar in a large mixing bowl; cream


4. Add eggs, sour cream and vanilla.


5. In another bowl, combine flour, chia seeds, salt and baking soda.


6. Add dry mixture to butter mixture. Mix thoroughly.


7. Spoon batter into prepared muffin tins, about two-thirds full. Sprinkle with cinnamon sugar.


8. Bake chia seeds muffins in preheated oven for 20 minutes or until an inserted toothpick comes out clean.
