Curry Chicken with Yogurt

If you love curry but a little concerned about the saturated fat in coconut milk, then this healthy chicken curry recipe made with low fat yogurt is just right for you.

Aside from being a healthier option than coconut milk, the other benefit of adding yogurt to curries is that yogurt imparts a flavorsome thick creamy texture in addition to making the meat fork tender and moist.

Easy-to-make and substantial, this mouth-watering chicken curry recipe yields juicy chicken meat bathed in warm savory gravy. Your family is sure to love this simple curry dish to bits!

Chicken Curry Yogurt Recipe

(serves 4)

Ingredients:

4 chicken thighs, remove skin (or use fresh whole chicken, chopped into pieces)

2 medium potatoes, cut into chunks

3 tablespoons low-fat plain natural yogurt (or non-fat plain yogurt)

4 tablespoons vegetable oil

2 medium onion, coarsely chopped

4 cloves garlic, coarsely minced

1 cup water

2-3 tablespoons soy sauce

 

Curry Paste Mix:

4 tablespoons curry powder (you can add more, if you want a strong spicy flavor)

3 tablespoons oil

1 teaspoon ginger powder

2 tablespoons lemon juice

salt and pepper to taste

 

How to cook healthy low fat chicken curry yogurt

1. Combine curry powder, oil, ginger powder, lemon juice, salt and pepper in a large bowl. Mix all ingredients together to form a paste.

 

2. Rub curry paste all over chicken thighs. Add yogurt.

 

3. Mix yogurt and meat thoroughly. Leave aside to marinate for 30-40 minutes.

 

4. Heat oil in a heavy skillet until hot, and then add chicken thighs. Stir-fry for about 3 minutes. Remove and set aside for later use in the recipe.

 

5. Drain excess oil, but leave the curdled yogurt in skillet.

 

6. Throw in onion and garlic, and fry over medium heat for 2-3 minutes or until softened and fragrant.

 

7. Return chicken pieces to skillet. Add potato chunks and cook for a 10-12 minutes.

 

8. Season with soy sauce, and pour in water. Mix thoroughly.

 

9. Bring chicken curry to a boil, and then lower to medium heat. Allow to simmer for 5-7 minutes or until the chicken thighs are cooked through and potatoes are tender but not mushy.

 

10. Serve immediately. Enjoy your delicious chicken curry yogurt with coconut rice or crusty French baguette to mop up the thick gravy goodness!
