5 Yummy Ideas to Enjoy Leftover Turkey

It is always our family tradition to have turkey for Thanksgiving. Beautifully tender, juicy, succulent applewood smoked turkey served alongside oven-roasted Yukon gold potatoes in a creamy lake of garlic butter. And, with great company and lots of good food, we usually end up with leftovers from our holiday meals.

Being a frugal mom living on one income, I hate waste of any variety, especially food. We are careful and try to use up what is in the refrigerator for our next meal.  I'd love to share my family's best 5 easy leftover turkey recipes with you. Your loved ones will go wild eating these deliciously transformed post-holiday dishes, and come back for more!

These quick and easy recipes make the most of surplus turkey in soups, salads, pastas, enchiladas, sandwiches and more. The ingredients needed are really simple, and the cooking time is incredibly short.

Easy Leftover Turkey Recipes

1. Turkey and Rice Soup

Place 6 cups water, 2 cups leftover diced turkey, 1 can cream of mushroom soup, 1 (6-ounce) box long-grained rice, 2 cups sliced mushrooms, and 1 cup grated carrot in a large saucepan.

 

Cover with a lid and let simmer over low heat for about 30 minutes, or until the rice is cooked. Serve immediately with your favorite salad.

 

 

2. Creamy Turkey Pasta

Prepare 1 can cream of chicken soup as directed. Cook ½ box (8 ounces) pasta according to package instructions, and then drain.

 

Combine pasta, and chicken soup with ¾ cup grated mild cheddar cheese. Stir thoroughly until cheese melts. Mix in 2 cups leftover cooked, diced turkey. Season with salt and pepper to taste. Great as a one-dish meal.

 

 

3. Turkey Enchiladas

Heat 1 tablespoon olive oil in large nonstick skillet. Cook 1 medium chopped onion, stirring occasionally, until tender.

Remove skillet from heat. Stir in 2 cups shredded turkey, 1 can (7 ounces) diced green chiles and 1 package ( 1.25 ounces) taco seasoning mix.

Lay 4 corn tortillas in a lightly greased 13 x 9 x 2 baking dish. Cover with turkey mixture, beans and 1 cup shredded cheddar cheese. Layer with remaining tortillas. Top with salsa and another cup of cheese.

Bake at 350°F  for about 30-35 minutes, or until heated through and cheese is melted. Perfect as a light lunch.

 

4. Artichoke Turkey Salad

Toss 2 cups diced turkey with 2 chopped large green onions, ¾ cup chopped and pitted black olives, and 4 artichoke hearts in a large bowl.

In a separate bowl, combine ⅓ cup low fat mayonnaise and low fat yogurt. Add to turkey mixture. Taste and season with salt and pepper. Ideal for people who want a healthy yet hearty salad.

 

5. Hot Turkey Sandwich

Heat 1 tablespoon vegetable oil in a non stick frying pan. Saute 1 finely chopped onion, 1 cup white mushrooms, ¼  teaspoon dried thyme, and rosemary over medium heat. Season with salt and pepper to taste. Stirring occasionally, for about 5 minutes or until golden.

Stir in 2 tablespoons all-purpose flour. Cook for about 1-2 minutes. Pour in 1 cup chicken stock and ¼ cup water. Bring mixing to a rolling boil.

Add sliced turkey breast to frying pan. Sprinkle 2 tablespoons chopped parsley and add 2 tablespoons lemon juice. Cover with a lid and let simmer over medium heat for 7-10 minutes or until gravy thickened.

Pour over wholemeal bread, or buns. Serve sandwich hot with chips or fries.
